
I will be visiting the beautiful Mayan Riviera at the El Cid Resort, about 30 miles south of Cancun in Puerto Morelos, Mexico. I am heading across the border for six whole days with my dearest gal pals from Redmond High School (which has now suddenly become a haven for bad behavior... kids were busted from undercover cops for selling meth and crack during school hours... WTF!). No boyfriends, husbands, babies or pets... just us girls relaxin' and reminiscing about our last trip to Mexico circa 1998 - we visited Mazatlan for our senior trip and instead of eating actual food, we saved our cash for booz and bull riding...and you know the rest ;)
I plan to eat a lot of yummy Mexican food and drink a lot of fruity frozen beverages as I lay in the sun and think about absolutely nothing. Did I mention how excited I am??
I hope to try some new things along the way, so that I can blog about them upon my return. In the mean time, I thought I would update my reader (yes, singular, assuming Franz is the only one that reads this thing...) and let you know what I accomplished on my list of must-make items for the fall/winter.
1. Pumpkin Chip Cookies - CHECK - I even have a few left in the freezer for a treat craving.
2. Pork Roast - CHECK - This was questionable... need to try it again.
3. Jackie's Joy Pretty Potatoes - CHECK - But, not so pretty...
4. Gretl's Chili and Lori's Corn Bread - NO CHECKS... maybe next fall!
5. Barefoot Contessa's Mac and Cheese - CHECK - Michelle and I made this for the Johnson's and we all devoured it (such a fun and relaxing visit :)).
6. Marge's Candy Brownies - CHECK - Made them for New Year's Eve and they were once again a hit.
7. Pumpkin Risotto - CHECK - Made this for Friend's Thanksgiving. The boys thought it was spanish rice... but it tasted amazing in my own personal opinion.
8. Mexican Lasagna - CHECK - Made one of my best versions yet for Super Bowl this year at the Kalamakis's beautiful new home.
9. Gretl's Artichoke Dip - CHECK - made this for a high school friend's gathering. Not as thick as I would have liked, but the flavor was just as I remember it!
10. Apple Pie/Tart - CHECK - This turned out so delicious and I plan to use different types of fruit to make one this spring!
And that's all for now... Happy Almost March, I mean Marge Madness!
