Did You Get Your Veggies Today?

I don't know about y'all, but thank the lord above, I love vegetables. I hate trying to type the word "vegetables", but I love them none the less.

Most people I would say/guess, do not heart veggies as much as I do. So, I thought I would share a few fun ideas to spice up your veggie dishes and find ways to better incorporate this most beneficial food group into your daily fixins'.

Ive got lots of veggie tricks up my sleeve, but the first, is roasted broccoli.

Wat You'll Need:
- a bushel of broccoli
- olive oil
- garlic powder
- salt and pepper

Pre-heat over to 375 degrees. Line baking sheet with parchment paper or foil. Cut stems off broccoli (or broccolini = hybrid of broccoli and kale aka fancy broccoli) and break into small pieces. Lightly drizzle with olive oil, garlic powder and salt and pepper and toss so all are pieces are evenly coated.


Toss in oven and cook for about 15-20 minutes, checking after 15. You'll want the broccoli just lightly browned.
This cooking method makes this veggie much more flavorful and exciting, especially for those of you who don't enjoy veggies. You can do the same thing with cauliflower, brussel sprouts, squash, asparagus, or any other fibrous veggie that can take he heat.

I hope you'll try this! Its much more fun than good old fashion blanching or steaming.

Serve with baked fish, brown rice, or steak, chicken, really whatever you fancy~

AH! I do this with brussel sprouts and it makes them oh so delectable....I never thought to do it with broccoli! Happy 2011!
