So, I was perusing through a Women's Health magazine (I think that's what it was?!) Friday night and discovered this great idea for a sandy! Looked to good not to try...
Here is what you'll need (serves 2):
- Pineapple slices (you can get in the can but you can usually find in the produce section freshly cut) - 1 jalapeno
- 1 red onion
- Your favorite teriyaki marinade (I love Yoshida's - thanks Kevin Mullin!)
- 2 Chicken breasts
- 4 slices of good Swiss cheese
- Your favorite rolls (I used ciabattas)
Here's how to do it:
1. Marinade the chicken breasts for at least 30 minutes. Then grill for 8 minutes on one side, flip and grill about 7 on the other, add the slices of Swiss on each piece and cook another minute(depending on how thick they are - mine were pretty thick)
2. While chicken is resting, grill pineapple slices for about 1 minute on each side, just to start the carmelization process. Also, toast the buns about 1 minute each.
3. Once chicken has rested for about 5 minutes, place on toasted buns, then stack pineapple, a drizzle of fresh teriyaki sauce, a few red onion slices, and jalapeno slices to taste.

You can serve this with any type of side you like, I chose wheat spaghetti noodles coated with satay peanut sauce and freshly chopped chives to garnish. It was so good I cant even explain it in a blog. Someday when I have a house and a new BBQ, I will make this for guests... SO GOOD.
